Depends on whether you are shooting for natural or board cuts. Just about any natural growing in GA will do, just season it well. As for boards, just about any hardwood will do depending on grain orientation. If in doubt go with plane sawn boards of the hardwood variety and don't get too skinny in your design.

Oak, Ash, Hickory pretty much any hardwood will do for a natural, get a nice shaped fork let it dry naturally or use one of the methods you can find here with a search, cut longer than needed incase the ends crack as it's drying. Skin it shape it if needed and put bands on it....
Board cuts again any nice straight grained hardwood will do as long as it has the strength, most home improvement store carry a couple of varieties...
You can also pick up a piece of multi-plex (basically good quality plywood usually birch I believe) at most craft stores, you can get a piece big enough for two or three forks for around 5 bucks....
